Chocolate Banana Muffins

Makes 12 muffins!

Ingredients

  • 2 Cups All Purpose Flour
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Light Brown Sugar
  • 3/4 tsp Baking Soda
  • 1/2 tsp Ground Cinnamon (optional)
  • 1/2 tsp Salt
  • 3 Large Ripe Bananas (1.5 cups)
  • 2 Large Eggs
  • 3 TBSP Butter (Melted)
  • 3 TBSP Vegetable/Canola Oil
  • 1 tsp Vanilla Extract
  • Up to 1 Cup of Chocolate Chips (Do as much you’d like)

Instructions

  1. Preheat oven to 350ºF. Generously grease the muffin pan.
  2. In a large bowl, whisk together the flour, sugars, baking soda, cinnamon, and salt.
  3. In a medium bowl, stir together bananas, eggs, butter, oil, and vanilla. Gently fold the wet ingredients into the dry ingredients until just barely combined. Gently fold in the chocolate chips (if using), being very careful not to overtax.
  4. Pour 1/3 cup of batter into each muffin slot.
  5. Bake for 20-25 minutes. Test inside with a toothpick. Let cool. Store in an airtight container to keep exterior soft.

Can freeze for 3-4 months
